Menu Plan Monday – September 10

It feels like fall!! I know not to get too excited, this is the South after all and I’m sure we’ll have another heat wave, but I’m enjoying the cooler weather anyway. Now if I can only get out there to run! This is the last week of Best Body Bootcamp and I need to make it count since the past 2 weeks have been dismal as far as my exercising goes. Though I won’t get down on myself, life happens, especially with 2 little ones. Best to keep moving forward. I love the program though and will try to keep it up. She is starting a third round of the bootcamp towards the end of October and I may participate again if I feel it will keep me on track better than I can myself [and the answer to that is probably yes!].

My husband was sick this past week for a day or two so the Rotisserie chicken I had planned became chicken noodle soup. I actually love making and eating my own soup – one more reason I love fall and cooler weather – SOUP! What are your favorite fall foods?

Here is what we have on tap for this coming week:

Monday: Braised Coconut Spinach and Chickpeas with Lemon (from freezer) over Sweet Potatoes

Tuesday: Flaky Fish Sticks from The Mom’s Guide to Meal Makeovers, Roasted Potatoes and Eggplant (bumped from last week)

Wednesday: Spicy Black Bean Burgers (from freezer) with Roasted Okra and Sliced Mango

Thursday: Chicken Sausage, Spinach, Peppers, Onions and Zucchini Pasta and Strawberries

Friday: Evening Out

Saturday: 20th High School Reunion [YIKES!! How did that happen??!!]

Sunday: Simple Supper
