This week’s menu is another one from the pantry and freezer, so no grocery shopping except for a few necessities like fresh produce. The big hit from last week’s menu was the herb garden chicken in the slow cooker. This was so easy and super tasty! The curried lentils and rice was the hands down easiest dinner ever to prepare, though it didn’t quite turn out as I had hoped. I only had curry powder on hand, and using a different curry paste as suggested in the original recipe might lend better flavor to the dish.
This week’s plan:
Monday: Roasted teriyaki salmon with quinoa and Asian stir-fry veggies (never made it Sunday from last week so got moved to this week)
Tuesday: Turkey bratwurst patties with mixed vegetables
Wednesday: Shrimp and grits with spinach
Thursday: Leftovers
Friday: Slow cooker cassoulet with broccoli
Saturday: Entertaining friends (probably having Asian noodle bar – will make several vegetable dishes, meat dishes and a few different sauces so that everyone can mix and match their own)
Sunday: SUPER BOWL!! (stay tuned on menu – I will be on CBS’ Better Mornings Atlanta between 5:30 and 5:40 am on Friday, February 4)
