Menu Plan Monday – October 29

I have been tentatively eating dairy for the past few weeks and my daughter appears to be over her intolerance to it. I say tentative because a part of me is scared to go overboard on it right now though she is eating yogurt without any adverse reactions. But I must say it is a huge relief to not have to worry over ensuring everything I eat is dairy free, and it is nice to have the freedom of incorporating it into my meals again. I have missed cheese especially – there just isn’t a very good dairy-free alternative though I tried several. I enjoyed a wonderful grilled cheese sandwich with my son the other day for lunch and savored every gooey bite!

I was so excited to make the Apple Cider Roasted Chicken with Butternut Squash for my family and friends this past weekend. It turned out good but I felt like it was missing something. Then I realized the next day that I left out a main ingredient – the apple cider! Seriously. That is what I get for trying to catch up with my friend while cooking dinner and going off my memory for the recipe details. Have you ever done that, left out a main ingredient on a dish?
