I apologize for not posting a new menu plan last week. I thought I would have time to get it up either before I left for my conference or during the conference. Obviously neither happened. I was away for five days at the annual Food and Nutrition Conference & Expo (FNCE) for the Academy of Nutrition and Dietetics. It was a great time learning the latest research in nutrition, attending the Expo for a client and networking with friends, old and new from around the country. But I was really ready to come home and hug my family by the end of it.


This past weekend we went for our annual apple picking at Mercier Orchards in Blue Ridge, Georgia. My son, C, was so excited – this was our 3rd year doing it and one of our favorite fall outings. My daughter, E, loved it too. She immediately snatched an apple off the tree and bit right into it.


We may have eaten just as many in the orchard as we brought home. Well, not quite. We did bring home a ton of apples. Those we do not eat right away will become homemade apple sauce, apple butter and other yummy treats. Some of my favorite pictures of our day are spread throughout the post.


So I”m jumping back into menu planning this week. While I didn’t have an official plan last week, we ate through a number of leftovers and food in the pantry that needed to be used. Here is what is on tap this week:

Monday: Tasty Tofu Nuggets with Steamed Broccoli and Roasted Potatoes

Tuesday: Sweet Apple & Squash Lasagna with a Green Salad

Wednesday: Flaky Fish Sticks from The Mom’s Guide to Meal Makeovers, Sweet Potatoes and Eggplant

Thursday: Halloween Neighborhood Party

Friday: Pigs in Blanket made with Applegate Farms Turkey Hot Dogs and Pumpkin Crescent Rolls with Green Beans

Saturday: Slow Cooker Turkey Pumpkin Chili with a Spinach Apple Salad

Sunday: Simple Supper
