It’s pumpkin carving time! C carved his first pumpkin last night. I love fall. I stocked up on pumpkin last week at the grocery store and made Pumpkin Cinnamon Rolls for my husband’s birthday breakfast this past weekend – one of his favorite treats. And with our surplus of apples from last week’s apple-picking adventures I made a big batch of Apple Butter and homemade Applesauce. I’ve never been a fan of applesauce to be honest, but homemade is an entirely different story – I loved it! Both C and E gobble it up.
I’m sure there will be many more pumpkin and apple goodies in our near future, and hopefully I can start getting in the kitchen more often to do more recipe creation.

Monday: Beans and Rice with Steamed Broccoli
Tuesday: Baked Ziti with an Apple Spinach Salad
Wednesday: Homemade Pizza with Strawberry Spinach Salad
Thursday: Slow Cooker Beef Stew with an Apple Raisin Salad
Friday: Evening Out
Saturday: Pan Roasted Pork Chops with Roasted Cauliflower and Lima Beans
Sunday: Simple Supper
