Menu Plan Monday – October 1

Hello October! Now starts the countdown to holiday madness. As much as a whirlwind this past year has been, it will only get crazier and busier between now and December. So if you aren’t a regular menu planner, now is the time to start! Start off this month right by taking a few minutes out of your day to plan out your family’s meals for the week. Try it for a few weeks and you will be amazed at how much less stressful your life is when you know what is for dinner versus having to try to think of something at 5 pm after a tiring day. Even if your plan involves take-out or ready-made meals from the grocery store, that is okay, at least you have a plan! And remember, that plans are always flexible. Enlist the help of your family in making it happen! Total side note: Can you believe my garden, which has hardly produced this season, is just now churning out some peppers and tomatoes? Just in time for fall and probably an early frost. Perfect. I don’t know if it doesn’t get quite enough sun or if I didn’t fertilize enough after planting but I had a similar result last year. I know the deer did not help my situation this year though when they decided to make  a midnight snack of my plants on more than one occasion. Well at least I’ll have some late season produce.

Monday: Slow Cooker 40 Clove Garlic Chicken with Roasted Sweet Potatoes and Green Beans

Tuesday: Shepherd’s Pie with a Spinach & Mango Salad

Wednesday: Slow Cooker Falafel with Romaine, Sliced Tomatoes and Whole Wheat Tortillas

Thursday: Vietnamese Ginger Scallion Fish with Quinoa and Roasted Okra

Friday: Chicken Sausage and Vegetable Pasta with Sliced Pears

Saturday: Evening Out

Sunday: Simple Supper
