I ended up making the Sunflower Zucchini Pie twice this past week. The first for my family as planned and the second time for my sister’s baby shower yesterday. It is always a huge hit. It is perfect if you have any guests who are on a gluten free diet. Sometimes I like to dress it up by adding sliced tomato to the top.
