Menu Plan Monday – November 17

And we are already half-way through November! I’ve been remiss again on posting my menu plans. I’ve had a loose plan in my head the past few weeks, but jam-packed weekend activities, time with family, and lots of work testing out recipes for My Menutrition have put my blogging on the back burner a bit along with a few other things. But we’ve been having lots of fun. Here’s a peak into what we’ve been doing lately:

Family Fun Playing with MegaBloks and General Mills cereals

General Mills sent me a care package of cereals with MegaBloks cars as well as the blocks themselves. Right now each box of cereal comes with a MegaBloks car with a choice of Hello Kitty or Power Ranger stickers. My children were beyond excited. But the idea behind the mailing was to create a Rube Goldberg course with the blocks and cars to pour a bowl of cereal. We never got quite that far with our activity, but my husband built a pretty cool ramp the cars went down. It kept us entertained for a while nonetheless, especially on a cold, rainy day where we wanted to be inside anyway. Of course we are all cereal lovers and everyone is enjoying the cereals – especially some of the cereals that I don’t normally purchase, which to me fall more in the dessert category (and we have done just that after dinner a few nights!).

Family Fun Picking Apples

Apple picking is my favorite fall activity to do with my family and we always go to Mercier Orchards in Blue Ridge, GA.  We just barely made it this year on the last day of their U-Pick season, and we couldn’t have been at a better time: cold, crisp air and lots of Pink Ladies and Yates apples for the picking! We came home with a slew of apples which I just started using this past weekend in a variety of ways: apple pie, applesauce, apple butter and dried apple peel “chips” for starters. Look for some new recipes soon! I did break down this year and get an apple peeler, corer, slicer. And oh my, how I love it! But not nearly as much as my husband and the kids. They are having a blast taking over that duty for me (primary reason I love it so much!) but I highly recommend this little gadget.

Now that we are mostly caught up, here is what is on my Menu Plan Monday for this week (with lots of fresh fruit):

Meal 1: Shrimp Creole (using this recipe as a basis) over Rice with a Spinach Salad

Meal 2: Beef and Lentil Vegetable Stew (playing around with a new recipe) with Potato Rolls

Meal 3: Slow Cooker Chicken Parmesan over Whole Grain Spaghetti with Broccoli

Meal 4: Asian Noodle Soup with a Kale Apple Salad
