Menu Plan Monday – May 28

Happy Memorial Day! I hope everyone has had a wonderful weekend. Today I am thankful for those men and women in our military who have died protecting our country. Their sacrifice and those of their families affords us the wonderful freedom we enjoy every day and often take for granted. This weekend is also special to us for another reason, it marks our wedding anniversary. We celebrated 5 years yesterday! On some levels it is hard to believe it has been 5 years, but with 2 kids it is hard to remember back to those days sometimes! We are blessed in our marriage and with our incredible children.

Here are some of the highlights from this past week’s menu in pictures.  Yes, I finally got the camera out this week! And in case you were wondering how the Lentil Burgers, turned out, they were just so-so. No pictures and not a recipe I would make again, just FYI.

Veggie and Chicken Sausage Frittata

Frittatas are quickly becoming a favorite go-to meal in our house. So versatile with whatever vegetables you have on hand. Usually I don’t include meat, but I had one chicken sausage link that was begging to be used. They are great without cheese, though I throw in some nutritional yeast for a little bit of that “cheesy” flavor and then my husband and son can put parmesan cheese on their slice if they so choose.

Vietnamese Ginger Scallion Fish

I  love this fish dish. I haven’t made it in a while but I will be posting the recipe for this deliciously easy and simple fish dish later this week!

 

Blueberry Oatmeal Muffin

This past week, I have done quite a bit of baking – almost every day it seems. We’ve enjoyed some treats and stored some away in the freezer for another time. Still trying to convince the husband we need a chest or standing freezer though! I loved these Blueberry Oatmeal Muffins. Easy to make and full of oats and berries. Our blueberry bushes should be ripening soon so I will be making more of these!

Garbanzo Bean Blondies - yes really!

I was so surprised at how good these White Bean Blondies were, made with garbanzo beans! My whole family loved them and had no idea they were made with garbanzo beans, or chickpeas, and no flour. These would be the perfect treat for someone on a gluten-free diet (as long as you use certified gluten free oats). I recently found some allergen free chocolate chips – no dairy, soy or gluten – and they taste just like the the real thing. Note to self: don’t use purplish napkins for food photography – I had to do a good bit of color correcting on the photo and it still isn’t quite right. I have much to learn still on food photography!

Pumpkin Cinnamon Rolls

These Pumpkin Cinnamon Rolls are a favorite treat that I make just a few times a year. They were a breakfast treat for our 5 year wedding anniversary.
