Menu Plan Monday – May 20

A few years ago, I had gotten some produce from Farmers Market Baskets and loved the service, but it just wasn’t convenient for me. Well, they finally have a pick-up location near me so I got my produce from them this past week, pictured above. I could not be more pleased with the selection, but best of all the price. I think it is also fun to be surprised with what I will get each week and come up with different ways of using it. I needed something to shake things up rather than having the same things each week. I don’t make it as often to my local farmers market as I’d like since Saturday mornings tend to be packed with other activities these days. But hopefully we can branch out more now that summer is almost upon us.

From this past week’s menu, the Meyer Lemon Slow Cooker Chicken with Sweet Potatoes was a good recipe. I ended up using the leftover chicken in a spur of the moment gnocchi recipe with the fresh spinach and tomatoes from my Farmers Market Basket pictured above. I never got a chance to work on my slow cooker lasagna recipe, but hope to sometime soon.

Monday: Turkey and Vegetable Spaghetti with a Strawberry Spinach Salad

Thursday: Horseradish Mustard Crusted Salmon with Brown Rice and Sugar Snap Peas

Friday: Grilled Flank Steak with Grilled Corn and Peach Salsa and Broccoli

Saturday: Evening Out

Sunday: Simple Supper
