It is hard to believe it is April this week! Do you do anything for April Fool’s Day? My family used to play all kinds of jokes. I remember my grandmother one year putting cotton balls in all of the biscuits she made for our family brunch. Well, all of the biscuits except those served to the children (thankfully I was at that table). I think my father and one of my cousins had quite a few before anyone realized it! And another year my father hid my sister’s new car. That was a fun morning.
From this past week, I made the Yaki Udon, pictured above, though I made some modifications. It was so good and everyone gobbled it up. I’m going to play with the recipe some more though and post soon. Best of all, it is super easy and quick to make.
