Well, this past week almost went as planned, though I STILL didn’t make the fish sticks, so they are on the menu again this week. It will happen this time. Otherwise, we enjoyed last week’s menu. The pressure cooker Spanish Chickpea Soup was great. I used kale in place of the escarole and turkey kielbasa in place of the chorizo. I added the kale with about 10 minutes left in the cooking, but then had to cook it an additional 10 minutes for the chickpeas to be fully cooked. The kale still held up very well though.
This is going to be a busy week for me as I will be out of the house several evenings for the annual Georgia Dietetic Association conference. So I had to plan the menu accordingly that my husband and son still have dinner. That is why the slow cooker and quick meals will come in handy this week. Here is our menu for the week:
Monday: Flaky fish sticks from The Mom’s Guide to Meal Makeovers, green beans and homemade macaroni & cheese
Tuesday: Homemade Pizza and Salad
Wednesday: Baked Vegetable Lasagna (though I’m going to attempt to make it in my slow cooker) and Salad
Thursday: Leftovers
Friday: Chicken Stir Fry with Brown Rice
Saturday: Mustard Maple Pork Tenderloin, Parmesan Spinach Cakes and Pressure-Cooked Carrots
Sunday: Evening out for friend’s birthday
