After the warm weather yesterday and the sunburn on my face (oops! totally forgot sunblock – at least I got some good vitamin D), I am ready to call it spring! However, I have a feeling Mother Nature will surprise us with another cold snap soon. But I’ll take what I can get and am starting to envision what I want to do with my garden this year.
Speaking of gardens and vegetables, I finally made it out to my local farmer’s market this past weekend. I bought some beets that I plan on roasting up this week. I have only recently developed a taste for beets and I have never actually purchased or prepared them. So it is time I break out of my vegetable rut and start challenging myself with new and different vegetables and/or recipes. While I would like to say I will do this weekly, it probably isn’t very realistic. I’m going to shoot for twice a month that I will either try out a new or different vegetable or a new recipe/preparation method.
From this past week’s menu, the Slow Cooker Eggplant Sauce was really good. I diced the eggplant and mushroom fairly small to sneak past my husband (eggplant) and my son (mushrooms). It had a nice, hearty flavor that I think could fool meat lovers that they aren’t missing anything. Everyone enjoyed it. My menu plan derailed once the weekend hit so I will try again this week with some of those dishes.
Here is what is planned for this week with plenty of fresh fruit to round things out:
Monday: Roasted Beets, Sugar Snap Peas, Baked Breaded Okra and Israeli Couscous
Tuesday: Vietnamese Ginger Scallion Fish with Quinoa and Roasted Butternut Squash
Wednesday: Lemongrass Pork
Thursday: Leftovers
Friday: Evening Out
Saturday: Peruvian Stewed Chicken in Cilantro Sauce over South American-style Rice and Broccoli
Sunday: Corned Beef, Cabbage and Potatoes
