I really don’t know how it is already June. This year is flying by. We had a wonderful family weekend though. The highlight was hiking on Saturday, which was a gorgeous day. We hiked Pigeon Hill, Little Kennesaw and Big Kennesaw Mountain. If you are local to Marietta, GA you know that there are some pretty tough sections, especially for a 3 1/2 year old. We were so impressed that our little boy made it the whole way! Of course we took lots of breaks and it did take us almost 5 hours. Thankfully we were well prepared with lots of snacks and plenty of water. Baby girl was a trooper too – of course she just had to hang out in the carrier, which was a nice little 15 pound pack on me!
My garden is starting to perk up, though I don’t think it gets quite enough sun now that the trees have grown up some more around us. There is one bell pepper already growing and it looks like I might have some cucumbers soon. The blueberries are ripening quickly though and we are having fun picking and eating them. My son loves to help. One of our fig trees is overflowing, though it will probably be a few more weeks before those are ready.
On Memorial Day we grilled out at my sister’s house. Both brother-in-laws were gracious enough to help me film a healthy grilling video for a Dr. Z and Friends blog post. One was on camera with me and the other was working the video camera (and took the photos above)! The post should be up soon but in the meantime, you can go over to my YouTube channel to watch Chef Tom McEachern in action on the grill. Of course my addition to the grilling was lots of fruit and vegetables. I love throwing both on the grill – brings out the natural sweetness with just a hint of smokiness.
I’m so happy to have found a wonderful vegan Pesto that I can eat. It was a great compliment to the pasta this past week and no one even noticed that it was vegan. I did deviate some though from the past week’s menu so this week has two repeats. But here is what is on tap:

Sunday: Thai Chicken with Coconut Rice and Steamed Broccoli, Cauliflower & Carrots
