Menu Plan Monday – June 25

Cucumber from my garden

The deer have not destroyed all of my garden, just yet. My first cucumber was finally ready for picking this past week. And my red bell peppers should be ready soon as well. I’m hoping that I get at least one zucchini before the whole plant is devoured.

From this past week’s menu, the Pollo in Potacchio was a good, new slow cooker recipe. It was a little more work on the front end than I usually like to do with slow cooker recipes, but the added flavor made it worth it. Next time I think I will add a bit more rosemary though. My favorite meal was the Carne Guisada. I made it in my pressure cooker and it had great flavor. Even my 3 year old ate an entire bowl full. I love finding more uses for my pressure cooker!

This week’s menu will focus on making more room in our freezer! We are at max capacity right now. Here is what I have planned:

Monday: Braised Coconut Spinach and Chickpeas with Lemon (leftovers from the freezer) over Sweet Potatoes

Tuesday: Turkey and Veggie Spaghetti (sauce leftovers from the freezer) with a Blueberry and Peach Salad

Wednesday: Easy Salmon Cakes with Roasted Cauliflower and Dill Carrots

Thursday: Zucchini Frittata with Fresh Fruit

Friday: Mediterranean Chicken in the Slow Cooker over Quinoa and Steamed Broccoli

Saturday: Broiled Tilapia with Garlic, Roasted Sweet Potatoes and Green Beans

Sunday: Simple Supper
