It is hard to believe our little girl is 6 months old today! She is such a joy and I love watching her interact with her big brother. They are so sweet together and completely adore one another. Thankfully she is turning out to be a better eater so far! I’ll be posting an update about that soon.
I hope everyone had a wonderful 4th of July. We had an action-packed day and capped it off with the Marietta fireworks, which is always a great display. I made this Smoky Potato Avocado Salad which was wonderful and a nice twist to traditional potato salad. It was worth going out and finding smoked paprika for it! Now I’ll just have to find more uses for the smoked paprika. I did make my Vietnamese Ginger Scallion Fish in the slow cooker rather than the oven. I prefer this dish prepared in the oven, however, as I like the charred/crunchiness of the ginger and scallions on top of the fish that the oven method produces.
While this isn’t food-related, I did make my own bug repellent this past week. I opted for cedarwood, lavendar and citronella for the essential oils in my blend, which I purchased at Whole Foods. Then I bought the witch hazel and a spray bottle at the grocery store for very cheap. I can’t believe how well it works! In the long run, it is much cheaper than the store-bought stuff, nor is it nearly as smelly or sticky. And best of all, so simple!

Monday: Pesto Risotto with Roasted Zucchini (will be subbing farro for the arborio rice) and Sliced Red and Yellow Tomatoes
Tuesday: Dinner out
Wednesday: Peanut Carrot and Cabbage Slaw over Soba Noodles with Sauteed Shrimp
Thursday: Slow Cooker Buffalo Chicken Lettuce Wraps
Friday: Panko-Crusted Fish Sticks with Green Beans and Watermelon
Saturday: Crispy Pork Chops with Sauteéd Spinach and Roasted Sweet Potatoes
Sunday: Simple Supper (clean out the fridge!)
