Menu Plan Monday – January 28

MPM_Button.pngI can’t believe January is almost over! One month of 2013, gone. Already. And I lost last week to being sick.

Everyone in the family was sick this past week, all taking our turns. We still aren’t 100% – this has been one of the nastiest colds to hit us and it seems to just linger. Needless to say, last week’s menu just didn’t happen. Other than my Cauliflower Celery Root Baked Potato Soup, which I must say was perfect timing! I enjoyed that most of the week, so soothing to my throat.

I wanted to jump start this week with making some snacks, breakfast items and dinner prep in advance but that didn’t happen. How many of you do that? Use the weekend, or any spare time, to advance prep for the week. I need to do get in the habit of doing this more often. That is my goal for this coming weekend. We are going to be starting a new school with our children and our routines are going to be quite different going forward. Therefore, I have to be even more prepared than I usually am. I did go ahead and brown the turkey for the spaghetti for tomorrow night so that will make dinner prep even faster. Baby steps.

Here is what is planned for this week with additional fruit served most nights:

Monday: Turkey and Garden Vegetable Spaghetti with a Romaine and Strawberry Salad

Tuesday: Horseradish Mustard Crusted Salmon with Roasted Cauliflower and Green Peas

Wednesday: Leftovers

Thursday: Tangy Black Bean Soup with Tortillas and Sliced Avocado

Friday: Spring Onion Casserole with a Spinach and Apple Salad

Saturday: Evening Out

Sunday: SUPER BOWL (no idea what we are doing yet!)
