This past week, I had lunch in my old neighborhood as I was passing through after seeing a client. I had heard the Candler Park Market had a deli counter now and the special of the day caught my eye: Apple Butter, Arugula and Grilled Cheddar Cheese Sandwich with a cup of soup, White Bean Kale. It was outstanding. I splurged and got a ginger ale on the side – an artisan brand with real ginger in it. It was lovely and just what I needed on such a cold day. I’m going to attempt to recreate the soup for this week’s menu, and who knows, maybe the sandwich too!
We spent the day yesterday at the Children’s Museum in Atlanta. The kids had a blast. E enjoyed “grocery” shopping in their “store” and “farmer’s market” filling her basket with all kinds of fruits, vegetables, and whatever else was in her way that wasn’t already taken by another child. It is the perfect place on a cold day with the toddler and preschool set. Of course I appreciated the emphasis they have on teaching children about where food comes from and all of the different fruits and vegetables.
Here is what is on our menu this week, plus fresh fruit like Cara Cara oranges, pineapple, apples and strawberries:
Monday: White Bean and Kale Soup (going to figure out my own recipe) with Rosemary Bread
Tuesday: Chicken Sausage, Broccoli and Peppers over Whole Grain Pasta
Wednesday: Cheesy Fish Sticks with Roasted Sweet Potatoes and Sugar Snap Peas (bumped from last week)
Thursday: Leftovers
Friday: Chicken and Tofu Enchiladas with a Kale Salad (bumped from last week)
Saturday: Evening Out
Sunday: Super Bowl Party
