Menu Plan Monday – January 21

We have a new grocery store nearby, a Wal-Mart Neighborhood Market. I’ve been looking forward to it opening and finally got a chance to check it out yesterday. I was not as impressed as I had hoped to be and my husband did not really care for the store. Overall I think some prices are a little less than where we normally shop, but they do not carry everything that I normally purchase. I’m not a fan of having to go to multiple stores to get everything on my list. Not to mention, we really take advantage of fuel savings from our grocery shopping where we normally shop and there wasn’t enough of a cost savings to make me seriously consider switching stores. It is certainly a nice addition to our area though and for stocking up on basics, I do think there are some good savings possible. I still need to check out our local Aldi as well and then do a better cost comparison.

This past week was one of the week’s where we almost had too much food in the refrigerator. My mother-in-law brought over a lot of Chinese food she had made and my parents brought over some as well so that sidetracked much of our menu plans. However, I’ll take the change of plans any time when others bring yummy food over. So the pho that has been on my menu plan for the past two weeks still didn’t get made. I think I’ll table it for another time though.

Here is what is on our menu this week:

Monday: Soup (new recipe to be posted later today!) with Sliced Cantaloupe and Rosemary Bread

Tuesday: Turkey and Artichoke Stuffed Shells with Strawberry Spinach Salad

Wednesday: Horseradish Mustard Crusted Salmon with Roasted Cauliflower and Green Peas

Thursday: Leftovers

Friday: Pulled Pork BBQ (courtesy of my parents) Sandwiches with Steamed Broccoli and Corn

Saturday: Evening Out

Sunday: Simple Supper (aka clean out the fridge!)
