Menu Plan Monday – February 25

Here we are, the end of February. It is hard to believe that two months of 2013 are already over. The past week has been a bit of a blur. E had a bad allergic reaction to her antibiotics which has put us on edge. She is fine and has been acting like herself, she just looks awful with horrible hives all over her body and swollen joints. We just watch her closely and hope that the worst is behind us. I know it pales in comparison to medical issues I’ve had friends go through with their children. I have always been blessed with healthy children, and this has certainly been worse on us than her, thank goodness.

We keep ending up with a ton of leftovers in our refrigerator, which is contributing to my meal plan derailment. So the week started off well and then sidetracked. I never made the Grilled Cheese and Chicken Sausage Waffles which have been on my menu plan for the past 2 weeks! Maybe I’ll try again another time because I really do want to try this recipe. This past weekend, I did do some cooking ahead for the week. I went ahead and prepped Tuesday’s meal, Chicken Pot Pie . I did make some alterations to the recipe (such as less butter in the filling) but it was a good foundation. Also my husband and I made the congee yesterday, which we will have on Wednesday. Congee is his comfort food. And E loves it!

Here is the what we will be having this week, plus fresh fruit:

Monday: Char Siu and Bok Choy over Rice Noodles

Tuesday: Chicken Pot Pie with a Cara Cara Orange Salad

Wednesday: Congee (Rice Porridge made with Chicken) with Steamed Broccoli

Thursday: Leftovers

Friday: Split Pea Soup with Red Wine and Ham with Pao de Queijo (bumped from last week)

Saturday: Evening Out

Sunday: Crispy Oven “Fried” Chicken with Sweet Potatoes and Green Beans
