Yes another fun-filled snow day, or 2 here in Atlanta. This time the city was better prepared though! My trip to a conference in Nashville was cancelled due to the weather. Knowing this was a likely possibility, I had stocked up well on my grocery trip early in the week. Although I only planned for 2 meals last week, I was prepared for more with leftovers in the freezer and lots of staples.
I did end up creating this Creamy Veggie Ravioli Casserole dish one night in place of the Ravioli Zucchini Casserole. I loved how it turned out as did most of my family (C was a little put off by all the veggies together).
This week, I will be working on clearing out some of our pantry items and freezer leftovers – we have quite a bit and I need to clear out some space. Here is what is planned, plus lots of fresh fruit:
Monday: Black Bean Cakes with a Poached Egg and Green Salad
Tuesday: Yaki Udon with Roasted Butternut Squash
Wednesday: Leftovers
Thursday: Freezer Leftovers (probably a soup)
Friday: Homemade Pizza Pockets (been wanting to play around with this for a while) with a Caesar Salad
Saturday: Evening Out
Sunday: Simple Supper
