Menu Plan Monday – December 31

Happy New Year! I never got around to Christmas cards this year. But if I had, the above picture should have been it. Of course this was only taken last night when we went to the Garden Nights Holiday Lights at the Atlanta Botanical Gardens but it is one of the best family photos we have! It is rare that the 4 of us end up in front of the camera together. Something to change for 2013!

I hope you all had a wonderful Christmas. It was fun watching my son gain a greater understanding about the holiday and my daughter enjoying it for the first time. He enjoys giving gifts as much as getting them! Let’s hope that continues.

Kale, Cherry and Almond Salad

Needless to say, my menu plan this past week didn’t quite go as planned. We ate A LOT of leftovers. I did cook some more out of The Smitten Kitchen Cookbook , which I absolutely adore. I hosted my Supper Club after Christmas and made the above Kale, Cherry and Pecan Salad (though I used almonds instead of pecans) and the Rice Pudding, Tres Leches from the cookbook. Both were fantastic. I also combined two different veggie lasagna recipes to make in my slow cooker, which I need to post soon. It was the best one yet and perfect for cold winter nights.

Here is what is planned for this week:

Monday: Ma Po Tofu over Brown Rice with Sauteed Spinach

Tuesday: Black-eyed Peas, Collard Greens and Ham

Wednesday: Leftovers

Thursday: Corny Salmon Cakes in the Slow Cooker with Steamed Broccoli

Friday: Evening Out

Saturday: Lemongrass Pork over Rice with Green Beans

Sunday: Simple Supper
