I hope you all had a magical Christmas. I know we did. We had a wonderful day with family and watching C and E play. C is beginning to grasp the meaning, beyond Santa. I did not do as much with our advent calendar this year as I had hoped but next year I will plan better. The day after Christmas we made our annual trip to the Atlanta Botanical Gardens for the Garden Lights display, which is always wonderful. Both children are amazed at all the lights and to hear E squeal with delight at each new one is music to my ears.
We had a second Christmas celebration with my husband’s family this past weekend. I made Szechuan Green Beans and Ground Turkey and Hot and Sour Chinese Eggplant, two of my favorite Chinese dishes to make. I also roasted some cauliflower with ginger, soy sauce and sesame oil. My mother-in-law made char siu fried rice and brought two of our other favorite dishes, beef chow fun and Singapore rice noodles. It was a huge feast topped off with Chinese pastries from a local shop.
I’ve been having fun with my new cast iron griddle that I got for my birthday. Yesterday morning I made my favorite, Banana Coconut Pancakes. So much easier and faster with a griddle! Why have I waited this long to get one??!!

Tuesday: Marinated Pork Loin with Mashed Potatoes and Broccoli
Wednesday: Black-eyed Pea and Collard Stew over Basmati Rice
Thursday: Garden Turkey Meatballs and Spaghetti with a Pear Spinach Salad
Friday: Leftovers
Saturday: Evening Out
Sunday: Simple Supper
