Menu Plan Monday – December 24

Cinnamon Toast French Toast

Happy Christmas Eve! I can’t believe it is almost Christmas. I feel like I’ve been running a marathon but the finish line isn’t in sight. With all of the birthdays and my daughter’s christening yesterday, I can finally focus on Christmas. My son is very excited and it does make it all the more fun now that he is understanding more about the holiday. We make sure to remind him of why we really celebrate Christmas and it isn’t all about Santa, or his elf, Mr. Cookie. Yes, my son named his elf Mr. Cookie. Proud dietitian mom moment.

This past week’s menu plan was merely a suggestion as I hardly followed it except for the Rotisserie-style Slow Cooker Chicken. I used the leftover chicken to make my Chicken Broccoli and Rice Casserole rather than the dumplings due to ingredients that I had on hand. I didn’t have enough time for meal preparation or grocery shopping so I kept it pretty simple.

Though I did take the time to plan for my daughter’s christening brunch. My sister and my mother were a great help with flowers and getting everything set up. I made Sunflower Zucchini Pie, Cinnamon Toast French Toast and a fruit salad. My sister also contributed a bacon quiche as she felt meat was lacking from my menu, which turned out to be a good thing as it won out over my “vegetarian” quiche-like pie. She definitely knew the crowd. I was grateful of course that she helped with the food! And I still love my Sunflower Zucchini Pie.

The Cinnamon Toast French Toast was the brunch favorite though, and I must say, it was A-MA-ZING! I love cinnamon toast and I love french toast and the two together is genius. This is the first recipe I’ve prepared out of the The Smitten Kitchen Cookbook that I got for my birthday last week. I can’t wait to do more from the book! And her food photography is gorgeous, I was almost embarassed to post my photo above.

I also got to use another birthday present and that was my new 3.5 quart slow cooker! I love it! I made this Gingerbread Latte for a special beverage treat. It was really good though I realized too late I should have wisked it more after it cooked as at the bottom of the pot was a lot of good stuff that was missed. Unfortunately I was running around so much I wasn’t able to get better photographs.

Monday: Slow Cooker Pork Loin, Sweet Potatoes and Roasted Zucchini & Squash

Tuesday: I’m making Roasted Carrot Souffle for my family’s dinner

Wednesday: Leftovers

Thursday: Corny Salmon Cakes in the Slow Cooker with Steamed Broccoli

Friday: Slow Cooker Veggie Lasagna and Green Salad

Saturday: Ma Po Tofu over Brown Rice with Sauteed Spinach

Sunday: Simple Supper
