Happy Monday! A bit of a late start today. Playing lots of catch up after taking off most of last week to be with my family. We had a wonderful and fairly laid back Thanksgiving. I started the morning off with a chilly 5K. My husband and children were supposed to do it with me, but a bad cold sidelined my daughter and husband. And my son decided he’d rather stay home where it was warm. Next year!
My contributions to the family feast was the salad above and pumpkin crescent rolls below (my latest obsession if you’ve been paying attention on the blog). The salad was mixed greens with strawberries, kiwi, pomegranate seeds, sunflower seeds and homemade balsamic vinaigrette. I can’t make a salad without fruit is seems. I wanted to add avocado as well but alas, the ones I bought were not ripe enough to use. It was a fantastic salad, if I do say so myself, and very festive. Great colors for Christmas too.
The pumpkin crescent rolls are a recipe I’ve been playing with now for a while and I think I finally nailed it. I made them fairly small as well to go along with our meal. C loved helping roll them up too. Recipe will be posted very soon on the blog.
And my last project for the weekend was finally making up a big batch of homemade apple butter – so delicious and great added to baked goods or oatmeal. It is really easy to make in the slow cooker, though the most painstaking part is peeling and chopping up all of the apples (above).
