Menu Plan Monday – December 16


What a whirlwind of a weekend! Holiday parties each night followed up by a birthday celebration. My parents hosted a birthday party for both my husband and I with a close group of friends. It was a wonderful evening with amazing food. Hopefully some of my family got good photos because I didn’t take a single one.

With all of the craziness we adhered to our menu plan for the most part. The Spring Onion Casserole made plenty for us to eat leftovers for a few meals. E can’t get enough of it. But without a menu plan, our dinners would be crazy and stressful. Even if I don’t always follow it 100%, I have to have a plan in place.

So with that in mind, this week isn’t as crazy and this is what I have planned:

Monday: Birthday Dinner Leftovers

Tuesday: Garbanzo Stew with Peanut Rice and Sauteed Spinach

Wednesday: Roasted Salmon with Cider Apple Glaze over Freekeh and Broccoli (bumped from last week)

Thursday: Slow Cooker Chicken Sausage and Shrimp Gumbo with a Spinach Pear Salad

Friday: Cheesy Meatloaf Minis with Mashed Potatoes and Green Beans

Saturday: Evening Out

Sunday: Simple Dinner
