It is the first week of school! My how time flies. And my little guy is starting kindergarten. We are going to be working on establishing a new routine at home in the evenings so this week’s menu may be more flexible than usual. But I have a well stocked pantry if I’m overly ambitious and need more slow cooker meals.
In the coming weeks, I’ll be making a big announcement about a new venture I’m working on with Lesley Baradel of Balanced Nutrition Atlanta. We are both passionate about menu planning and are taking it to a whole new level with an online business dedicated to helping you get tasty meals on the table in a hurry that the whole family will love and you can feel good about serving. How’s that for a little tease? Stay tuned!
In the meantime, here is what I have planned for this week:
Meal 1: Tofu Curry Noodles with Vegetables and Watermelon
Meal 2: Pork Chops with Dijon Herb Sauce with Roasted Sweet Potatoes and Broccoli
Meal 3: Bow Tie Pasta with Pesto, Shrimp and Peas and a Strawberry Spinach Salad
Meal 4: Pot Roast with Mashed Potatoes, Green Beans and Carrots
