Menu Plan Monday – August 25


I finally took the plunge and got a Vitamax, thanks to a great deal on QVC and credit card cash back. I’m so excited and for the 3 days I’ve owned it, I’ve used it at least once a day. So far I’ve just made juice, smoothies and fruit popsicles. I’m looking forward to doing more with it – especially soups!


My children love helping in the kitchen and it was a nice change for my son and husband to get in the kitchen together yesterday. They made Jiaozi (dumplings) for us for lunch. We steamed the Jiaozi and my daughter and I mixed up two different sauces to use – one a sesame and soy sauce and the other spicier with chili paste. Everyone gobbled it up.

From last week’s menu, the Slow Cooker Honey Mustard Pork Loin was a huge hit. My parents ate with us that night and raved over it, especially the sauce which I tweaked a bit to include more apple cider vinegar. This one is definitely a keeper recipe.

Here is what we’ll be eating this week (plus lots of fresh fruit):

Meal 1: Thai Curry Tofu with Eggplant and Okra over Jasmine Rice

Meal 2: Salmon with Red Pepper Pesto over Arugula and Spinach with Whole Grain Rolls

Meal 3: Slow Cooker Greek Stuffed Chicken Breasts

Meal 4: Szechuan Turkey and Green Beans over Jasmine Rice
