School is back in session for my son this week. He will be going to preschool 5 days a week, though he will only stay for lunch 4 of those 5 days. His school does not provide any food though so I have to pack his lunches. I vow to be more creative with his lunches this year. He always wants the same thing, but I feel guilty not being more creative and in the past he only needed lunch 2 days a week so it wasn’t as big of a deal since I knew on the other days he ate different things to get in more variety. I might end up adding his lunches to my menu plan, but for now I am not.
I did make a double batch of Turkey Corn Dog Muffins this past weekend. They were great paired with a salad for a light dinner and the leftovers I froze to be used for future lunches for my son. I like this recipe, but I cut the baking soda by a 1/2 teaspoon as the first time I made them I could taste a metallic bitterness, a sign of too much baking soda. This latest batch was perfect.
Here is what I have planned for this week:
Monday: Yogurt, Fresh Fruit (watermelon, peaches & cherries) and Zucchini Bread
Tuesday: Chicken and Thai Eggplant Curry over Brown Rice with Watermelon
Wednesday: Sunflower Zucchini Pie with Roasted Sweet Potatoes and Fresh Peaches
Thursday: Slow Cooker Shredded Beef Tacos with Avocado, Slaw and Apple Slices
Friday: Evening Out
Saturday: Marinated Salmon Seared in a Pepper Crust with Cucumber Vinaigrette over Quinoa and Roasted Carrots
Sunday: Asian Peanut Butter Pork over Brown Rice with Roasted Okra
