Last week’s menu didn’t go exactly according to plan. I did some extra cooking one day with a friend and colleague for a new project we are working on and will be announcing soon. How is that for a tease??!! But it provided lots of leftovers for family meals for much of the week. So this week is a combination of what was planned last week and a few new dishes.
Here is what is on our menu this week:
Meal 1: Lemon and Herb Baked Fish with Spaghetti Squash Mac and Cheese and Broccoli (bumped from last week)
Meal 2: Baked Parmesan Garlic Chicken with Roasted Sweet Potatoes and Asparagus (bumped from last week)
Meal 3: Veggie Patch Tofu Pie with Baked Cauli-Tots
Meal 4: Balsamic Pork Tenderloin with Freekeh and Green Beans
