Roasted Dill Carrots
This carrot dish is easy to throw together and roast for a quick dinner.
  • 1½ pounds baby carrots
  • 1 tablespoon olive oil
  • ½ teaspoon Kosher salt
  • ½ teaspoon dried dill
  • Squeeze or two of fresh lemon juice
  1. Preheat oven to 400 degrees F.
  2. Combine all of the ingredients in a large bowl and toss well to combine.
  3. Put carrots in a baking dish and roast for 20-25 minutes or until browned and desired level of tenderness.
